Veggie halloumi burger

15-06-2016, by Mieke

Halloumi contains a lot of protein and calcium and it's got a really high melting point, which makes it very suitable for frying or grilling. It's an ingredient with a lot of potential when it comes to creating new recipes.

And the best news? The taste of grilled halloumi is absolutely amazing!!

Time to share my halloumi burger recipe with you guys :)

TIME: 10 minutes

GROCERIES (for 2 servings)

  • 200g halloumi cheese
  • 1/2 zucchini
  • 2 grilled peppers (canned)
  • 1 avocado
  • 3 hands of rucola salad
  • 3tbsp of extra virgin olive oil
  • Rosemary, salt and pepper
  • Whole wheat soft bun

HOW TO?

Cut the zucchini into thin slices, for example with a cheese slicer. Use half of the zucchini to add to your hamburger. Cut the rest of it in small pieces and bake them to use as garnish, together with some rucola.

Poor one table spoon of oil and some salt and pepper over the zucchini slices.

Poor one table spoon of olive oil and one table spoon of rosemary over the halloumi.

Grill the ingredients on medium heat, using another table spoon of olive oil and turn them regularly until the zucchini slices and the halloumi get golden brown.

Build your burger:

Cut the bun in half and smear the lower bun with 1/4 of the avocado. Add the rucola, paprika, halloumi, zucchini and the other 1/4 of avocado. Finish off with some salt & pepper and the other half of the bun.
