Sizzling couscous salad

When I'm in a hurry, I always go for recipes that have been proven themselves over time. Couscous gives structure to this salad and absorbs the flavors. Have a go with this healthy salad, use it to surprise on sunny days and take the left-overs to work next day!


TIME: 15 minutes

GROCERIES:

150g couscous, 200ml water
150g chicken filet, cut into cubes
200g fresh peas
100g baby spinach or corn salad
30g cashew nuts
75g feta cheese, cut into small cubes
100g cherry tomatoes, cut in halves
12 mint leaves, roughly cut with some scissors
Juice of 1/4 lemon
3 tbsp extra virgin olive oil
1tsp soy saus, salt, pepper

HOW TO?

  • Add the water to the couscous and let it soak for 5 minutes.
  • Boil the peas for 5 minutes until they're soft enough, yet still crispy.
  • Bake your chicken with some olive oil and soy sauce. Once the chicken is cooked through, add the cashew nuts and bake for another 3 minutes.
  • Let the couscous, the chicken and the chicken cool down while you cut all the other ingredients.
  • Mix everything in a big bowl and finish with some salt and pepper.
