When I'm in a hurry, I always go for recipes that have been proven themselves over time. Couscous gives structure to this salad and absorbs the flavors. Have a go with this healthy salad, use it to surprise on sunny days and take the left-overs to work next day!
TIME: 15 minutes
|150g couscous, 200ml water|
|150g chicken filet, cut into cubes|
|200g fresh peas|
|100g baby spinach or corn salad|
|30g cashew nuts|
|75g feta cheese, cut into small cubes|
|100g cherry tomatoes, cut in halves|
|12 mint leaves, roughly cut with some scissors|
|Juice of 1/4 lemon|
|3 tbsp extra virgin olive oil|
|1tsp soy saus, salt, pepper|
AVERAGE CONTAINING PER SERVING:
|of which saturated||9g|
