Salmon and asparagus with cashew rice

Ever since we moved to Sweden, it's very easy for us to get our hands on the most delicious salmon. However, finding good and affordable fish should never be hard. In most countries you can find frozen filets in the freezer of the supermarket. Get cooking and surprise your guests with this deliciously tasty dinner, prepared in no time.

Preparation time: 12 minutes

Groceries for 2 persons:

Salmon filet, with skin  One big piece of 300, or 3 pieces of 150 g
Asparagus 300 g
Unsalted cashew nuts 40 g
Brown rice 140 g (uncooked)
Soya sause 4 tsp
Olive oil tiny bit

 

Recipe:

  • Boil your water and cook your rice
  • Meanwhile, heat up a pan on medium heat, add some olive oil and place your salmon filets in the pan, with the skin down (when the salmons are baked, I think the skin is the tastiest part of the fish)
  • Poor 1 tea spoon of soya sauce over every filet and keep turning them regularly
  • Now heat up your wok and bake the asparagus and the cashew nuts on high fire together with two tea spoons of soya sauce.
  • Mix your rice through the asparagus and cashew nuts, or serve separately
  • Place the salmon on top to create your master piece
