To me, nothing is more ‘weekend-goals’ then having pancakes on a Saturday or Sunday morning. However, I want them to be both tasty and healthy and that’s where it gets difficult.
While Instagram is filled with commercial-worthy looking, mega healthy, non-destructible and super tasty 3-ingredients-pancakes (are you getting stressed already 😅), mine usually end up completely destroyed, ugly and… not that tasty to be fair 😕
So, if you’re just as eager and desperate to create these pancakes as I am, keep reading, because I’ve found a fool-proof recipe in the book Vélochef. This book contains many recipes for athletes (especially cyclists), they are not hard to follow and the best thing is: you can get onto your bike afterwards, but it’s not obliged 😉
I made some adjustments to the recipe, because I didn’t have all the ingredients in my cupboard, so feel free to play around like I did.
WHAT YOU NEED (for 2 persons):
Pancakes (about 10 small pancakes)
First, roast your nuts and seeds for a few minutes, until they are golden brown. Stir the yoghurt and the marmelade together and put the nuts, seeds and your fruity yoghurt aside.
Mix all the pancake ingredients together until your batter is smooth and without any lumps. If you want to bake the pancakes in the healthiest way, you can use olive oil. However, used coconut oil, because it’s tasteless and therefor won’t affect the taste of you pancakes.
Bake every small pancake with care, stack them on top of each other, add your fruity yoghurt on top and sprinkle your pancakes with the nuts and berries.
