Fresh easy peasy soup

During winter time we're used to eating a lot of peas soup, traditionally served with sausage in it. However, the past few days the sun has been shining here in Stockholm, which makes me long for Spring again. This version of the green peas soup is lighter than the traditional Dutch one, both taste- and calorie wise. It's super healthy and can be served in only 15 minutes.

Time: max. 15 minutes

Groceries for 2 servings

150g frozen green peas
1/2 small chopped onion
1 clove of garlic, chopped
50g chopped potatos
18 mint leaves
1 boullion cube
600 ml of water

How to?

  • Add the boullion cube, the potato, the onion and the garlic clove to the water and bring the water to a boil on high fire
  • When the water is boiling, add the peas and 12 mint leaves. Boil for another 8 to 10 minutes
  • Use a hand mixer or poor the mixture in your blender and blend untill the soup gets smooth
  • Use the rest of the mint leaves to garnish your soup and serve with bread and some butter
