Våffeldagen!

I'm celebrating the Swedish Waffle Day without the guilty feeling of the sugar and without a waffle iron. Check out how it's done!


Sweden is a magnificent country. Did you know they even have a special day for their waffles? On the 25th of March the Swedes celebrate the arrival of spring with Våffeldagen! Hence, there's nothing you can do but to eat waffles on this marvelous day. There were 2 tiny obstacles I encountered when I decided to join this Swedish tradition: 

I don't have a waffle iron and I didn't feel like eating the sugary version of the original waffle.

That's why I decided to go for a super healthy waffle batter and make my waffles with a grill pan instead of my non-existent waffle iron. And although the Swedes have their waffles as a dessert, I prefer to have these for breakfast, because they give the day a perfect and healthy start!

Time: 10 minutes

Groceries for 2 persons:

This batter will get you 4 deliciously healthy waffles:

50 grams of oats

1 1/2 average sized banana

2 eggs

1/2 tsp of baking powder, 1 tsp of cinnamon powder, 2 tsp of honey and a tiny bit of salt

Topping:

Total Greek style yoghurt 0%, marmelade, raspberries, walnuts and honey.

HOW TO?

  • Put the oat in a mixer and grind it into oat dust
  • Mash the bananas and add it to your oat dust, together with the rest of your ingredients
  • Mix everything together into a firm batter
  • If you have a waffle iron, that's great! Divide the batter over your iron and make your delicious waffles
  • If you don't have a waffle iron, use a grill pan, add some butter or coconut oil and bake your waffles

Your waffles are good to go if they are golden brown on the outside (and soft and smooth on the inside). Top your waffles up with anything you like. To continue the healthy vibe, I added some Greek style yoghurt, raspberries, a teaspoon of marmelade, some walnuts and a drizzle of  honey.

TIP! 

You can add some chunks of dark chocolate to your mixture to make these waffles the ultimate comfort food!
